Yes, leave early, no problem, and leave the bike down South afterwards, as coming back is a pain on weekends, even if you return late.
Get the ferry to bring your bike back via Aberdeen or Central, just costs a few $s and saves you a lot of frustration. Every time I bike on the Family Trail during weekends, I swear never to do it again. Mon-Fri it's OK, especially as the visitor floods will be easing off soon anyway.
The Snake Trail is always free, but riding a bike up there is demanding and not for the faint-hearted like myself.
Cycling in South Lamma is great any day of the week, even on weekends. Very few tourists venture beyond Sok Kwu Wan, now that the Govt., green groups and swarms of young Plastic Nurdlers have succeeded in cleaning up most of the plastic pellets down there, doing a great job. The official round trip Sok Kwu Wan, over the hill down to Tung O Wan and then back along the South coast to Yung Shue Ha and Mo Tat Wan to Sok Kuw Wan must be one of the nicest and most scenic rides in HK, IMHO.
Riding in the still totally deserted Lamma Quarry is also great fun and the concreted paths go all round, easy and mostly flat, very scenic and you'll probably never ever meet a human in there. I haven't. No wild dogs either.
The YMCA hasn't quite gotten around to getting exclusive access yet - more paperwork, it seems - so you're still free to ride in there, after sneaking around their million-$ fence they built around the entire area already.
For biking training laps, I'd recommend up to Lamma Winds via the Kindergarten and Tai Ling and then down Cable Road to the Power Station gate and back into the Village. A nice little, cool ride before breakfast, sunrise and peace, I should do it more often.
